Headed To The Big D…And I Don’t Mean Dallas

Last issue, I started a series on healthier eating — recreating comfort food dishes to be much healthier but still delicious. This is a journey that I am on this year. I had a barrage of doctor’s appointments over this last week. The results of these appointments has forced me to make a choice: learn a new way to nourish my body or head straight towards the big D… Diabetes.
Hearing that I am now considered a diabetic was a true wake up call. I am not yet on insulin but I am headed down that road quickly. I knew that I had to make an effort to change my life. I owed it to my family, and I owed it to myself.
Most of us forget to take care of ourselves. We run after our children, we make sure our spouse has what they need, we care for our neighbors, we make sure the dog is walked…but we don’t make sure we have been taken care of. It is impossible to take care of others if you are sick!
This week’s recipe is recipe number 2 in our journey towards better health. It is a classic spaghetti dish, but with zucchini noodles or “zoodles.” You can still have your favorite plate of spaghetti and not feel like you need to take a nap after you eat.
