Your mother was right, breakfast is the most important part of the day. Most of us (I’m guilty too) skip breakfast, or just grab a coffee loaded with sugar and cream, or a sugary sweet pastry. We need protein to start or day, aka brain food. I know when I start my day with sugar, by mid-morning, I have a headache and I’m starving. I find myself looking for anything I can find to curb my appetite until it’s time for lunch. These little egg muffins are not only delicious, but also very good for you. They store beautifully in the fridge and re-heat like a dream. Kids love them, so that makes mom loves them. Have them for breakfast, have them with a salad for lunch, have them at night for supper. Feel free to add whatever meat, cheese, or veggies that your family enjoys. Start your day right with these delicious little bites of protein.
