Do I Have To Go Back?

Last week, my husband and I spent a week of vacation in the Smoky Mountains. We were both in desperate need of rest and reconnection with each other. This year has been hard on everyone. During the craziness of 2020, we have started two business on top of my husband’s busy freelance graphic design work and me working 40 plus hours a week at a very busy Ford dealership. To say we are stretched thin is an understatement.

When you become that busy, something is eventually going to be neglected. Once that starts happening, you are forced to make a choice of which thing you are going to let go. How do you decide which thing is going to drop? With careful discussion and leaning on the wisdom of God.

A full week of relaxation has helped re-charge us and helped us re-center our focus. We are excited for what is about to happen in our future and are leaning heavily on God to help us continue to make wise decisions. We are coveting prayers right now in our lives, for sure!

While on vacation we ate at so many good restaurants! Did I stick to eating all healthy foods you may ask? The answer is a resounding NO!!! I let myself enjoy food and not think about every little calorie, fat graham, or carb I was putting in my body. It was nice to just eat what I wanted for a week. One of our favorite dishes, however, is perfect for my low-carb lifestyle and I cannot wait to try it at home.

It is a delicious creamy tomato casserole. It is filling and comforting and a cinch to put together. We are just at the start of fall and fresh summer tomatoes are harder and harder to find. This recipe is a great way to make your home feel like summer while you use the hot house tomatoes of the winter. My husband and I loved it, and I hope you do as well!
